Ingredients
- 2 cups cooked and cooled chicken breasts chopped
- ⅓ cup celery chopped
- 1 hard boiled egg chopped
- ¼ cup sweet pickle relish
- ¾ cup mayonnaise
- salt and pepper to taste
- 8 slices whole wheat bread
- loose leaf lettuce
Instructions
Mix together the chicken, celery, egg, mayonnaise, relish, salt and pepper.
Toast bread and top half with lettuce.
Spread ¼ of the copycat chicken salad over each, and top with remaining toast slices.
Notes
*if you are found of eggs, use two
*some like to add a little sugar (around a ¼ tsp)

This is by far my favorite chicken salad recipe. I use a little less mayo, but otherwise follow the recipe. It’s great as a sandwich or on a bed of lettuce. Thanks for the recipe!

I just made this and it's delicious! Easy too...I used a rotisserie chicken. The chicken came to almost 3 cups so I used it all, added one more egg just because I like, and the rest of the ingredients the same. It made a lot! Thank you for sharing recipe Robin!
