This summery, Greek-inspired dinner comes together in a snap with the help of a grill basket. This recipe can easily be doubled to serve four, either by cooking in two batches or using two grill baskets.

What you’ll need
Ingredients
2 servings
1 large garlic clove, finely grated
2 teaspoons finely chopped oregano
¾ teaspoon kosher salt
¼ teaspoon crushed red pepper flakes
2 tablespoons olive oil, plus more for grill basket
10 jumbo shrimp (about 8 ounces), peeled, deveined, tails left on
1 medium zucchini (about 8 ounces), sliced into ¼" rounds
1 pint cherry tomatoes
2 pita pockets
⅓ cup crumbled feta (about 1.5 ounces)
Special Equipment
A flat grill basket (about 13 1/2 x 8 1/2")
Preparation
Step 1
Prepare a grill for high heat. Whisk garlic, oregano, salt, red pepper, and 2 Tbsp. oil in a large bowl. Add shrimp, zucchini, and tomatoes and toss to coat.
Step 2
Brush wires of grill basket with oil, then add shrimp mixture. Arrange in an even layer and close basket. Place grill basket on grill and cook, turning often, until shrimp is fully cooked through and zucchini and tomatoes are lightly charred, about 6 minutes.
Step 3
Meanwhile, grill pita just until warm and toasted.
Step 4
Transfer shrimp mixture to a large bowl and toss until coated with tomato juices. Divide among plates and top with feta. Serve with pita alongside.

I agree with the other reviewer. Tempting to add more stuff in- but don't. I do often add more tomatoes and more zucchini. Simply wonderful delicious recipe. serve with a nice green salad and voila. perfect summer time meal.very easy to prep- takes less than 8 min on the grill. fabulous!

A great, simple, yummy dinner. I can see the temptation to add bell peppers and other stuff but would not recommend it -- this was so delicious the way it was and I wouldn't want to drown out any of the flavors. The only substituion I made was to use some dried Aleppo pepper for the red peppr. Used an open grill basket and it worked great. The shrimp I had were pretty big and I ended up pulling them out and cooking them a little longer (didn't want to lose any of that tomato juice!). Next time, if they're that big again, I'll mix them with the veggies to coat them with oil and spices, then toss them in the grill basket first and cook them a couple minutes before adding the veggies.

So simple so good. I didn’t have a grill basket but I used my perforated grilling pan (kind of like a small flat bottom wok with large holes). The food didn’t char like it would in a basket but it fine. The flavors were spot on and especially so because of the simplicity. I don’t think marinating this would add anything. This will be a regular goto recipe,

This was easy and delicious! I put the shrimp and veggies in separate containers and marinated a few hours before putting them on the grill. I used 1 tsp. dried oregano instead of fresh, and I used yellow squash instead of zucchini. I put the shrimp on one side of the grill basket and veggies on the other. I'm glad I did because the squash took a bit longer than the shrimp. I will definitely make this again.

Our garden is overflowing with all varieties of cherry tomatoes. I was searching for recipes to use up what is on my counter before I harvest more. This sounded perfect, with everything already in our pantry. I doubled the recipe (and accidentally doubled the tomatoes again) and prepared under the broiler. Pulled the shrimp and finished the veggies to a nice char. The marinade and sweet roasted tomatoes blended with a mild French feta were perfect with the shrimp. There were no leftovers!This will be a go-to recipe for those quick meals and busy nights.

Made this in the broiler, came out great. Cooked all the veggies first, then added the shrimp for the last few min. Amazingly, both kids were happy.

I really liked the flavor of the tomato and zucchini, but just don't think shrimp went with the flavors. I realize that shrimp are quick-cooking and that's why they were chosen here. Sorry, won't make again.

This recipe was quick, easy and delicious. I added kalmata olives and yellow pepper and because the weather was not cooperative, roasted everything on a sheet pan. I also brushed one side of the pita bread with some of the olive oil, garlic and herb mixture and broiled it quickly before serving. I will definitely make this again.

Delicious and easy! I added steak bites and onion to make it a heartier dish, and served with orzo and garlic naan. It was quick and a hit at my house.
