When blanching or cooking cauliflower, keep it white by adding 1 cup of milk. The milk will also give the cauliflower a sweeter flavor.
You can keep cauliflower's white color and enhance its sweetness by adding 1 cup of milk when cooking it.
- Add a cup of milk to the cooking water and bring it to a boil.
- Add the cauliflower pieces and allow the water to return to a boil; gently boil for 3 to 5 minutes.
- When parboiled or cooked to desired doneness, remove the cauliflower from the boiling water with a slotted spoon and place in ice water to stop the cooking action.
- After parboiling, the cauliflower is ready to be sautéed, added to a stir-fry or cooked with other vegetables or ingredients.
Adding either 1 or 2 tablespoons of lemon juice or 1 tablespoon of vinegar when cooking cauliflower will also help it keep its white color.
