Rompope is a popular holiday beverage in Mexico. The Mexican eggnog-like drink is made by infusing eggs, milk, and vanilla. Rompope is often spiked with rum or brandy and served with a dollop of whipped cream on top.

Rompope is a thick and creamy holiday drink that is reminiscent of eggnog. Egg yolk is used to thicken the drink but must be done carefully to avoid scrambled eggs in your drink.

What are the ingredients to make Rompope?

To make this holiday drink, you are going to need the following ingredients:

  • Milk
  • Sugar
  • Vanilla extract
  • Orange zest
  • Egg yolks
  • Cream (or half and half)
  • Condensed milk
  • Aguardiente

How to make Rompope

Now that you have gathered your ingredients, it is time to make Rompope. All you have to do is follow the steps below:

  1. The first step is to simmer the milk, sugar, vanilla, and orange zest over low heat for 30 minutes, stirring occasionally.
  2. While the milk mixture simmers, combine the egg yolks with the condensed milk. Add the cream and mix well.
  3. Next, temper the egg yolk mixture by adding a couple of tablespoons of the summered milk mixture and stir. Do this twice before adding the egg mixture into the milk mixture. This will help prevent scrambled eggs.
  4. Cook over medium-low heat, stirring constantly. Once the mixture thickens, remove it from the heat and cool completely.
  5. Add the aguardiente and refrigerate until ready to serve.

Rompope is a popular holiday beverage in Mexico. The eggnog-like drink is made by infusing eggs, milk, and vanilla. Rompope is often spiked with rum or brandy and served with a dollop of whipped cream.

The drink is believed to have originated in the Convent of Santa Clara in Puebla, Mexico.

Today, Rompope is enjoyed by Mexicans and non-Mexicans alike during Christmas.

Ingredients

  • 5 Cups milk
  • ½ Cup sugar
  • ½ Tsp vanilla extract
  • 1 Tsp orange zest
  • 5 Egg yolks
  • 1 Cup cream (or half and half)
  • ½ Cup condensed milk
  • Aguardiente to taste (1-2 cups)

Instructions

  1. In a pot, combine the milk, sugar, vanilla and orange zest and bring to a simmer. Cook over low heat for 30 minutes stirring occasionally.
  2. In a bowl combine the egg yolks with the condensed milk. Add the cream and mix until incorporated.
  3. Add a couple of tablespoons of the simmering milk into the egg yolk mixture and stir. Repeat the process 2 more times. Slowly incorporate the egg yolk mix into the milk mixture and stir well.
  4. Cook over low-medium heat and stir constantly until the mixture starts to thicken. Remove from heat and let it cool completely.
  5. Add the aguardiente and refrigerate until ready to serve.
