You know what I love about food blogging and food bloggers? There is never any shortage of new recipes. We are always creating, always inventing, and always evolving. We grow, we learn, we experiment, and we constantly come back to the well with new ideas, new techniques, and new recipes.

A few years ago, I did a an epic roundup of low carb ice cream recipes. Like a fancy new computer, that recipe collection was obsolete almost from the moment I published it because people just kept on creating new keto ice cream recipes. Me included. So I figured it was time for a new recipe collection so that you all could benefit from your friendly food bloggers’ healthy keto ice cream recipes.

So many amazing keto ice cream recipes

Really, when it comes to keto ice cream, the sky’s the limit. The flavor possibilities are virtually endless. Of course, there are some things that simply aren’t keto and need to be avoided. But where there is a will, there is a way.

Different flavorings and extracts can help you mimic your favorite ice cream. And with the recent explosion in good keto cookies and treats, like the ones from HighKey, you can chop them up and work them in! Cookies and Cream, anyone???

You also don’t absolutely NEED to have an ice cream maker. They are extremely useful, but there are many wonderful no churn ice cream options too.

But I think you will see from these amazing recipes that there are still so many wonderful ways to enjoy ice cream on a keto diet.

A few things to keep in mind when making keto ice cream:

  1. Keto ice cream made with erythritol-based sweeteners tends to freeze very hard. You can use them but you will need to let your keto ice cream sit out on the counter for 10 to 15 minutes to soften. You will find that many of my recipes also include allulose or BochaSweet – these two sweeteners help make soft ice cream that’s scoopable straight out of the freezer.
  2. Consider freezing it in individual portions so you don’t need to defrost the whole batch when you are craving ice cream. I’ve even got these cute little individual ice cream containers from Tavolo!
  3. If you are in the market for an ice cream maker, there are plenty of inexpensive options. I had this basic Cuisinart ice cream maker for over 20 years and it worked perfectly.
  4. If you don’t have an ice cream maker and don’t want to get one, look for no-churn recipes. You could also invest in some popsicle molds, as every ice cream base would be great as popsicles too. These are my favorite popsicle molds.

    I love your ice creams. Your vanilla is so wonderful I usually make that, but last week I made your Fresh strawberry (no Churn) and my husband loves it so much he ate the whole recipe in 2 days.

    Started keto diet a few months ago but craved sweet ice cream. So far have made salted caramel, raspberry cheescake and Lemon curd recipes. All fantastic. Problem is they taste great to everyone else in family who are not on any kind of diet. My mother-in-law has scoffed more than half secretly (but she is 88 so has to be forgiven) and she considers herself an ice cream maker extraordinaire.
